Rippa Dorii Verdejo Organic is not merely an exquisite wine; it is also a profound commitment to sustainability and deep respect for the land
We source grapes from our own organically certified vineyards across various zones of the DO Rueda, where poor, stony soils predominate. We also draw from old vines yielding very low crops, some over sixty years old, planted at varying densities. A portion of the fermentation takes place in barrel, which is then blended into the final cuvée, lending the wine an elegant, refined palate with remarkable persistence. The remainder is vinified in stainless steel tanks, with very gentle bâtonnage of the fine lees to build profound aromatic complexity, volume, and a luxurious, creamy texture.
Rippa Dorii Verdejo Organic is not merely a delicious wine; it represents a genuine commitment to sustainability and deep respect for the land. The winemaking process is an art form in its own right:
► Strict low-temperature control is maintained throughout to preserve the grape’s vibrant aromas and freshness.
► Following an extended maceration, the must undergoes natural static settling (débourbage) without filtration, keeping it lively and free of impurities. Fermentation is spontaneous, driven by the indigenous yeasts present on the grape skins.
► Bâtonnage (lees stirring) is carried out with extreme delicacy on the finest lees, enhancing aromatic complexity, mouthfeel richness, and volume.
► A modest 5% of the final blend consists of Verdejo fermented in barrel (French oak), adding depth and sophistication without compromising the wine’s inherent freshness.
Commitment Rippa Dorii Verdejo Organic has earned widespread acclaim in competitions and wine guides for its balance and dedication to sustainability. Decanter awarded it 92 points and selected it among the thirteen finest examples of the variety in Spain. In 2023, for instance, it was highlighted in the Guía Peñín for its freshness and complexity, achieving a strong score that places it among the leading organic whites from Rueda. It aligns with the growing number of discerning consumers seeking wines that are not only delectable but also environmentally responsible. Rippa Dorii stands as a brand that seamlessly blends tradition with modernity, appealing to classic wine lovers and newcomers alike who value organic practices.
Freshness and Complexity That 5% in barrel: This subtle proportion of barrel-fermented Verdejo (in French oak) does more than add complexity—it is a nod to the variety’s remarkable versatility. It is as if the wine itself declares: “I can be bright, modern, and refreshing, yet I also possess real depth and gravitas.”
Viticulture
We select grapes from our own “certified-organic” vineyards from different zones of the DO Rueda appellation where the poor, gravelly soils dominate, with major outcrops of limestone at medium and high altitudes. We also include grapes from old vines with very low yields, over sixty years´old and with varying planting densities.
Harvest 2025
The growing season was defined by an exceptional hydrological year, with rainfall doubling or even tripling the annual average (300–400 mm). Following a historic budbreak, the humidity led to localized mildew and sporadic hail which, combined with summer water stress, resulted in a lower production volume. However, this reduction was instrumental in elevating quality, yielding berries with higher concentration. Thanks to a warm summer and a slow, progressive ripening period, the grapes achieved optimal balance. The final sanitary conditions were excellent, as fungal pressure was limited to the early cycle, allowing the fruit to reach the winery with intense aromatic charge and uniform maturity.
Elaboration
Natural débourbage and fermented with its own lees
The grapes are harvested during the night to achieve maximum protection of the aromas of the berries. Once in the winery, the temperature is further reduced and the grapes are very gently pressed, with their skins, at cool temperatures, to get the deepest, most richly nuanced transfer of aromas. Clarification is natural and at cold temperatures. The spontaneous fermentation also starts out cold with the must clean through decanting off, with no use of filters or other manipulation. In addition, part of the fermentation takes place in barrels before the final blending of the wine, which makes its tannins fine and polished.

High intensity and elegance, deep, fresh and complex, with fragrant notes of fennel, mountain herbs and underlying mineral and balsamic aromas coming through.
Taste.
An initial sensation of fresh fruit which appears in the flavoursome atatck with salty touches. It is long, intense and leaves the characteristic, slightly bitter note of verdejo.
